breakfast club...

Speaking of clubs, that's one I would gladly pay dues to join up.  I love breakfast! :D 




Peach Scones
(adapted from Better Homes and Gardens plaid cookbook 2nd edition)

Preheat oven to 400 degrees.

Wash and dry 2 small or medium firm but ripe peaches.  Halve them and remove the pit like you would an avocado seed. Scrape out the tough inner tissue where the seed was, and then dice the peaches into small pieces (you do not have to peel).  Set aside for later.

Ingredient list:
2 1/2 cups all purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup butter, cut into pieces
2 beaten eggs
3/4 cup whipping cream
about 1/4 cup milk for brushing the tops
1-2 teaspoons sugar (or to taste) for sprinkling the tops

Combine the flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl. Using a pastry blender or your hands, cut or press the butter pieces into the flour mixture until you get coarse crumbs. Add the diced peaches at this point and mix well.

Combine the eggs and whipping cream. Make a well in the middle of the dry ingredients and pour in the egg mixture. Using a wooden spoon or a fork, mix gently until the dry ingredients are nearly incorporated.

Turn out the dough onto a lightly floured surface. Press it all together and then knead/fold about 6 or 8 times. Press out into a circle about 3/4 to 1 inch thick (probably about a 10 inch circle maybe).  Cut into 12 triangles and place on a baking stone or pan. Brush wedges with milk and sprinkle with sugar. Bake for 15 minutes and then check on them. I had to bake somewhere between 18 and 20 minutes to get the top as brown as I wanted it.  Serve warm.



The little sweet-tart peaches give these scones such a zing. And I must confess, other than adding the cinnamon and adding the peaches, I didn't change anything - at least intentionally. I did misread the butter as 1/2 cup, where the original recipe said 1/3 cup. But they were so tender and yet didn't crumble excessively. I didn't even notice the mistake in the finished product; only here, when typing the ingredient list. hahaha, silly me.
